A Celebration of Water Stewardship and Innovation at Sawdust City Brewing

On September 29, 2017, more than 40 diverse stakeholders gathered at Sawdust City Brewing Company in Gravenhurst, Ontario to recognize Sawdust as a provincial leader in water stewardship practices, and to celebrate the installation of an innovative on-site wastewater management and treatment system.

According to Michael Fagan, Senior VP, BLOOM, “What was amazing about this event is we had everybody here in the craft beer ecosystem – the industry association, craft brewers, hop growers, technology/solution providers, regulators, politicians, academia, media and non-profits. They all heard the same message and they all saw the same solution. Everyone needs to be pointed in the same direction if we’re going to effect change and increase adoption of innovative water solutions”.

Sawdust City Brewing has installed an innovative on-site wastewater management system that is the first of its kind for any brewery in Ontario. In fact, it’s the first installation in any food and beverage company in Canada.

“Responsible water management is a top industry priority for OCB members,” says Scott Simmons, President, Ontario Craft Brewers. “Congratulations to Sawdust City for being a leader on this critical initiative.”

This innovative solution known as the BRÜ CLEAN System is a small footprint, modular and chemical free wastewater treatment solution that integrates ‘next generation’ process technology components with in-brewery source reduction and design improvements.

“We made the decision to make an investment in a leading-edge technology to handle our wastewater, said Rick Dalmazzi, COO, Sawdust City Brewing. It’s both the technology and the approach.  You get rid of as much of the solids as you can by side-streaming and the system handles the rest”.

“On-site treatment is very important for the craft brewing industry because it lets the brewery take responsibility for their own water management. When they do that they’re able to open up in towns all across North America and be thriving members of that community”, said Derek Davy of ECONSE Water Purification Systems and developer of BRÜ CLEAN.

“The type of leading-edge innovation we’re seeing at this facility offers the opportunity for craft breweries like Sawdust City to say, no we’re not just going to give you dirty water, we’re actually going to take responsibility for it”, said Lindsay Telfer of the Canadian Freshwater Alliance.

Sam Corbeil, Brewmaster and Co-Founder of Sawdust City further stated that “Hundreds of breweries in the last two years have come into Ontario, which puts a strain on municipal water systems. As craft brewers, we cannot simply dump these by-products down the drain. Moving forward, we need to be responsible and be proactive as opposed to reactive”.

Adoption of this innovation resulted from several pilot projects that were used to demonstrate the solution at different sized craft breweries in Ontario. The pilot projects were conceived by BLOOM and are part of the Water & Beer initiative that BLOOM is delivering in collaboration with the Ontario Craft Brewers.

BLOOM developed the Water & Beer online platform to make it easier for craft brewers to understand the Ins, Outs and In-Betweens of water and resource management. It provides them with practical learning modules, case studies and videos they can use to reduce their water use and improve their by-product and wastewater management practices.

In June 2017, BLOOM received a Water’s Next Award from Water Canada for the Water & Beer initiative.
